Aubergine Souffle

Preheat the oven to 150° C gas 2

Ingredients

1 large aubergine
3 eggs
3 tbsp grated parmesan
70 g double cream
4 basil leaves
olive oil, salt and pepper

Method

1) chop the aubergine into cubes, then fry in hot olive oil until slightly soft, then leave it to cool

2) in a bowl mix the eggs and cream then stir in the aubergine, season to taste, add the Parmesan, basil, and process the mixture in a blander

3) put the mixture in well buttered ramekins and cook at bain marie in the oven for 30 minutes.

Serve immediately with a fresh tomato sauce. Salsa di Pomodoro
