Kofta kebabs can be made with any type of minced meat, but bacon is very successful if you have a food processor
Ingredients
250 g streaky bacon, chopped
1 small onion, chopped
1 celery stick, chopped
5 tbsp fresh wholemeal breadcrumbs
3 tbsp chopped fresh thyme
2 tbsp Worcestershire sauce
1 egg, beaten
salt and freshly ground black pepper
oil for brushing
Method
1) place the bacon, onion, celery and breadcrumbs in a food processor and process until finely chopped, add the thyme, Worcestershire sauce, salt, pepper, and enough beaten egg to bind to a firm mixture
2) divide the mixture into eight pieces and use your hands to shape the pieces around eight bamboo skewers
3) brush the kebab with oil, and cook over a medium- hot barbecue for 8-10 minutes, turning occasionally.
