Beef With Lemon Grass and Noodles

Marinade

2 garlic cloves
1 tbsp granulated sugar
3 shallots
1 tbsp fish sauce (nuoc mam)
1 tbsp raw sesame seeds
1/4 tsp freshly ground black pepper
1 tbsp Asian sesame oil
2 stalks fresh lemon grass, sliced thinly,chopped

Ingredients

1 pound boneless beef
1/2 pound rice or noodles
1 cup shredded cucumber
2 cups shredded lettuce
1/4 cup fresh mint leaves
1/4 cup fresh coriander chopped
10 roasted peanuts, coarsely chopped
1 fresh or dried hot red chile, shredded
coriander sprigs, for garnish

Method

1) process all marinade ingredients together, until smothed

2) slice beef into thin slices, 1/8-inch thick, place in a bowl and cover with marinade for about 1 hour.

3) Preheat the grill, then grill the meat, for1 minute on each side, cool

4) cook the rice in boiling water , fellowing the packet instruction, drain, rinse, and set aside.

To serve, place in individual bowls, cucumber, lettuce, sprinkle with mint and coriander, distribute the noodles or rice, then the meat, sprinkle with more, mint and coriander, then add the chopped peanuts, and decorate with some pieces of shredded hot pepper and coriander sprig.
