Frothy and elegant dessert to serve for get-together with friends or romantic candlelight dinners, can be made with frozen berries.
Ingredients
3/4 lowfat milk
6 oz, fresh or frozen blueberry or raspberry, strawberry
2 tbsp water
2 tbsp sugar
1/8 tsp mace
1/4 tsp cinnamon
2 tbsp flour
2 tbsp sugar
3 egg yolks
1/2 tsp vanilla extract
1/2 cup whipped double cream
blanched almonds
Method
1) refrigerate a large bowl to get it cold
2) bring the milk to boil, remove milk from the heat and set aside to cool
3) put the blueberries in another saucepan with the water, cover and simmer over medium heat until soft, about 6 minutes
4) remove from heat, stir in sugar, mace and cinnamon
5) pour the blueberries mixture in a pie pan, set in freezer
6) in a saucepan combine the flour and 2 tbsp sugar, whisk in egg yolks and the milk, mix well
7) cook over low heat, stirring constantly until the mixture thicken, about 2 - 3 minutes, continue to simmer and stir until it is the consistency of pudding, stir in the vanilla, set aside to cool
8) bring chilled bowl from fridge, and pour the whipping cream, whip until stiff peaks form, set back in fridge
9) fold the cold berries into the thickened yolk mixture, stir in the whipped cream
10) chill before serving.
