Ingredients
21 round sheets of shortcrust ready pastry, defrosted
1soft goat's cheese chopped
1 Boursin cheese with herbs chopped
1 cup crème fraîche
1 egg, beaten
1 egg yolk
pepper and coarse salt to taste
Method
Preheat oven to 180°C gas 4
1) in a bowl mix both cheeses, cream, pepper and the egg, until creamy
2) line a buttered tart dish with one of the shortcrust pastry, prick the pastry and cook in oven for 5 minutes, cool
4) pour the cheese mixture on the tart base
5) cover with the other shortcrust pastry , make sure both pastry sheets are stuck together, press both sheets with wet fingers
6) brush pastry with the egg yolk, sprinkle with the coarse salt
7) bake 40 minutes
