Ingredients
4 red peppers, cored seeded and sliced
4 onions, chopped
4 potatoes, chopped
1 Boursin cheese
1 1/2 litres beef stock
salt and pepper to taste
1/2 cup double cream
1 cup milk
Method
1) in a large pan simmer all ingredients for 30 minutes, except milk Boursin and cream
2) heat milk and cream together
3) process all ingredients in a blender until creamy, season to taste.
