Champiñones al ajillo

A popular Spanish tapa, delicious served with crusty bread.

Ingredients

350g button mushrooms, grimed, sliced in half

110 ml olive oil

4 chopped cloves garlic

1 small dried red chilli

1/2 cup finely chopped parsley

salt to taste

Method

1) Stir fry the mushrooms in the very hot olive oil ( to smoking point) for about 3 minutes

2) add the chilli and garlic and cook for 30 second longer, add the parsley and season with the salt to taste.

Serve immediately.
