Ingredients
4 chicken breast, skinned and halved crosswise
flour for dusting
salt and 2 tsp black pepper to taste
15 g butter
1 tbsp grapeseed oil
2 garlic cloves crushed
sprigs of marjoram
8 slices Prosciutto ham
125 ml Marsala
125 ml white wine
Method
1) beat the chicken pieces, between 2 sheets of greasproof paper, until very thin,
5 mm, 1/4 in
2) dust chicken with flour and sprinkle with salt
3) in a frying pan with hot butter, fry the chicken on both sides with the garlic for 3 minutes
4) remove chicken from pan and place 1 sprig marjoram and 1/4 tsp pepper on each chicken piece, then wrap with a Prosciutto slice
5) return chicken to the pan and cook very gently for another 5 minutes
6) add the Marsala and wine , return to the boil, cook for 3 minutes, turning.
