Ingredients
800 g chicken pieces, with bones
800 g pork spare ribs, with bones
15 cups cold water
4 pieces ginger root, crushed
4 spring onions, scallions tied into a knot
4 tbsp rice wine or dry sherry
Method
1) bring to the boil, chicken, pork, ginger, spring onions and water, skim off the scum, reduce the heat and simmer for 3 hours
2) strain the stock, discard, the meats, ginger and onions, add the wine and return to the boil, simmer for 3 minutes.
This stock can be frozen in small containers.
