Ingredients
90g flour
250 ml milk
2 eggs
60 g caster sugar
3 drops almond essence or vanilla essence
4 tbsp grapeseed oil or cooking oil
40 red or green seedless grapes, you can use cherries, pitted in summer, bottled cherries, well drained, work very well
Method
Preheat the oven to 220° C gas 7
1) process in a blender, flour, milk, eggs, caster sugar, almond essence and 1 tbsp oil, until creamy
2) grease a muffin tin, then place in the preheated oven for 6 minutes, until very hot
3) fill each tin with the batter until half full, add 4 grapes or cherries in each tin
4) return to the oven and bake for 15 minutes, until puffed up and golden brown
Serve immediately sprinkle with icing sugar
