Delicious with grilled chicken or fish
Ingredients
1 kg courgettes, washed and ends trimmed
4 tbsp olive oil
1/2 tsp sugar
1/2 tsp cumin
2 medium red onions, thinly chopped
100g raisins, soaked in warm water for 20 minutes
4 tbsp pinenuts, toasted
salt and freshly ground black pepper to taste
Method
1) cut the courgettes lengways in 4 equal parts, sprinkle with salt and leave them in a colander for 15 minutes so that they loose some of their water.
2) heat the olive oil and fry the onions, sprinkle with the sugar and cumin, over a high heat for 5 minutes, reduce the heat and simmer for 20 minutes, until the onions are golden, stirring often, remove from the heat , drain and keep the oil
3) wash the courgettes and dry them, set the frying pan over a high heat and return the oil to the pan, when the oil is hot fry the courgettes for 5 minutes, stirring often, drain the raisins and add to the courgettes along with the pinenuts and onions, season to taste.
