Crepes Suzette 

Pancakes with Orange Sauce

Ingredients

8 cooked crêpes Crepes - Pancakes Recipe
2 lumps sugar 2 tsp
2 tangerines
1 oz butter 2 tbsp
1 oz castor sugar
1 tbsp curacao
3 tbsp rum or 3 tbsp Grand Marnier, Cointreau or brandy

Method

1) prepare the crêpes

2) rub the lumps sugar over the tangerines until they are saturated in tangerine oil and zest

3) in a mixing bowl crush the lumps sugar and stir in the caster sugar and beat in the butter, add the curacao and 1 tbsp tangerine juice, mix well

4) reheat the crêpes, covered in foil in the oven

5) spread the hot crêpes with the butter mixture, and fold in four

6) heat the rum until warm, then set fire to it,pour over the crêpes
