Ingredients
12 slices of baguette
4 tbsp olive oil
salt and pepper to taste
90 g sun-dried tomatoes in oil drained and sliced
1 tbsp capers,chopped
90 g black olives,pitted, sliced
1 garlic clove, finely chopped
1 tbsp chopped oregano
1 orange or yellow pepper, cored seeded,chopped
2 tsp red wine vinegar
1 tsp sugar
Method
Preheat the oven to 220° Gas 7
1) brush the slices of bread with 3 tbsp oil, sprinkle with salt , bake for 5 minutes
2) fry in the remaining oil, the tomatoes, capers, olives, garlic, oregano, peppers, after 2 minutes, stir in the vinegar and sugar, stirring frequently cook for another 5 minutes.
