Easter fish feast

Many fish can be cooked in this way ( sea bass, trout, cod loins, salmon steaks and monkfish )

Ingredients

6 sea bass or other fish

drizzle olive oil

1/2 cup parsley, finely chopped

1/2 cup basil, finely torn

5 anchovy fillets, chopped

2 tbsp capers, chopped

1 green chilli, chopped

2 cloces garlic, finely chopped

juice of 1 lemon

150 ml olive oil

sea salt and freshly ground black pepper to taste

Method

Preheat the oven to 190° C gas 5

1) oil a large baking tray

2) with a sharp knife, make three deap slashes on one side of each fish, place the fishes on the baking tray

3) mix together all the ingedients to make a salsa verde

4) spoon a teaspoon of the salsa verde into each of the slashes

5) pakce the fish in the oven and roast for 10 minutes, rotate the tray and cook for another 5 minutes

Serve the remaining salsa with the fish.
