Feta Salad with Spinach Crispbread, sumac and Pinenuts

Ingredients

500g young spinach, washed and dry
200g feta cheese, crumbled
1 tsp fresh oregano
75 g pineneuts

For bread

25 butter
2 pitta bread  Pitta Bread Recipes

Dressing

1/2 garlic clove, crushed with a little salt
1 tbsp red wine vinegar
2 tsp sumac
4 tbsp virgin oil
salt and pepper to taste

Method

Preheat the oven to 180°C gas 4

1) Split the pitta bread in half and brush with the butter both sides, bake the bread for about 10 minutes turning once

For the dressing mix all ingredients together.

To serve , put the spinach, roughly broken crispbread, half the feta, the oregano and the pinenuts in a bowl give a good toss then put the remaining feta and dressing on top, toss again.
