Ingredients
2 sheets filo pastry
1/4 garlic clove, crushed
1 tsp olive oil
1 tbsp butter
1 tbsp flour
250 ml milk
1 bay leaf
350 g fish fillets, cut into cubes
100 small prawns
1 tbsp parsley
Method
Preheat the oven to 180° C Gas 4
1) blend in processor the oil and garlic, until creamy , lay the filo sheets on top of each other on a baking tray,brushing them with a little olive oil garlic mixture, scrunch them to fit the dish you want to use, then cook in oven for 8 minutes
2) melt the butter, then add the flour,let it foam for a minute
3) stirring gently, whisk the milk add the bay leaf, bring to a simmer, cook for 3 minutes, until the mixture thickens
4) fold in the fish, prawns and parsley, season to taste, and cook gently for 5 minutes.
