Fish Rolls with Walnuts

Ingredients

2 large fish fillet, cut into quarters
2 spring onions,chopped finely
1/2 tsp salt
1/2 tsp sugar
1/2 tsp cornflour
1 tsp soy sauce
1 tsp dry sherry or rice wine
1 egg
50 g walnuts, finely chopped
25 g cooked ham, sliced, each slice cut in quarter
oil for frying

Method

1) mix the salt, sugar, cornflour, soy sauce, sherry, spring onion and egg, beat together

2) dip the fish pieces in the egg mixture and then in the walnuts

3) lay a slice of ham on each piece of fish, then roll up and secure with wooden cocktail sticks

4) deep-fry in hot oil until golden, drain on paper towels.
