Ingredients
400 g spaghetti
2 egg yolks
150 ml single cream
25 Parmesan
1 tbsp chopped chives
4 slices smoked salmon stripped
Method
1) cook the spaghetti according to the pack instructions
2) beat the egg yolks with the cream, parmesan and the chopped chives and season to taste
3)drain the paste and return to the pan, adding the cream mixture, stir in the smoked salmon , toss together and gently cook for 2 minutes.
