Fried Squid Flowers

Ingredients

400 g prepared cleaned squid
1 medium green pepper, cored and seeded, cut into small pieces
4 tbsp vegetable oil
1 garlic clove, chopped
1/4 tsp ginger root, finely chopped
2 tsp spring onion, finely chopped
1/2 tsp salt
2 tsp Chinese rice wine or dry sherry
2 tbsp crushed black bean sauce
5 drops sesame oil

Method

To prepare the squid

Cut of the head and tentacles, remove the small soft bone, the transparent backbone and the ink-bag, peel of the skin, wash and dry.

1) score the flesh of the open squid, in a criss-cross pattern

2) cut the squid in small bite size,

3) blanch in a bowl of boiling water for few seconds, drain and dry very well

4) heat the oil and stir-fry the bell pepper for about 1 minute, stir in the garlic, ginger, spring onion, squid and salt and pepper, cook 1 minute stirring

5) stir in the wine, bean sauce and blend well, sprinkle with the sesame oil.
