Ingredients
1 slice white bread, crust removed
1 garlic clove
2tbsp extra virgin olive oil
2 tbsp white wine vinegar
6 large ripe tomatoes, skinned and finely chopped
1 small onion finely chopped
1/2 tsp paprika
pinch of ground cumin
2/3 cup tomato juice
salt and ground black pepper
To garnish
1 green pepper, seeded and chopped 1/2 cuncumber, peeled, seeded and chopped
For the croûtons
2 slices bread, cubed and deep fried
Method
1) soak the white bread in enough cold water just to cover and leave for about 5 minutes, then mash with a fork
2) pound the garlic, oil and vinegar using a pestle and mortar, or purée in a blender, then stir this mixture into the bread
3) spoon the mixture into a bowl and stir in the tomatoes, onion, spices and tomato juice, season, then chill.
4) make the garnished and croûtons
To serve, ladle the soup into chilled soup plates and then hand round the garnishes separetely
