Green Beans and Sticky Chilli Jam

Ingredients

4 tbsp brown soft sugar
2 tbsp Thai red curry paste
1 tbsp vegetable oil
600 g 1 lb green beans
1 tbsp Thai fish sauce
a bunch of Thai basil or ordinary basil
1 star anise

Method

1) tip the sugar into a wok with a good splash of water and allow to dissolve, over allow heat, then turn up the heat and boil until it turns a light brown caramel, remove from the heat, pour into a bowl to cool for 5 minutes, then mix with the curry paste

2) heat the oil in the wok, then stir-fry the beans for 2 minutes until they start to blister, add the caramel mixture, then continue to fry for 2 minutes, add the star anise and a touch of water and the fish sauce, then fry again, keeping the heat high for appreciatively 4 minutes,until the beans are cooked, add the basil chopped and stir well.
