Harissa Wild

Tunisian chilli sauce, table condiment,used with tagines and couscous.

Ingredients

50 g dried red chillies, 2 cloves garlic, 1 tsp caraway seeds, salt, 11/2 tsp ground cumin, 2 tsp coriander seeds, 1 tsp crushed dried mint leaves, olive oil.

Method

Remove the seeds from the chillies, tear them into pieces, soak them in warm water for 20 minutes, drain and process, crush the garlic with a little salt, pound all the ingredients to a paste.
