Katchumbali Spicy Salad

Ingredients for 8 people

3 eggplants, medium sized
1 1/2 cups of tomato sauce (you can use passata or finely chopped tomatoes)
1/4 cup extra virgin olive oil
2 tsp ground cinnamon
1 tsp fresh chilli finely chopped or dried red chilli flakes.
1tbsp crushed dried mint ( you can use finely chopped fresh mint)
salt and pepper to taste
2 1/2 tsp or more salt to sprinkle over the eggplants.

Method

1) finely slice the tomatoes and onions and put in a salad bowl.

2) peel and slice the carrot and cucumber (although you can just wash the cucumber) and add to the onions and tomatoes.

3) cut the chilli in half and remove the seeds, then chop finely and add to the bowl.

4) squeeze the lemon over the ingredients and mix them together adding seasoning to taste.
