Ingredients
4 lamb chops
1 tbsp olive oil
500 g chickpeas ,drained and washed
6 red peppers from a jar
1 garlic clove chopped
2 tbsp coriander, chopped
zest and juice 1 lemon
1/2 tsp cumin seeds, crushed
1 bag ready wash spinach
Method
1) in hot olive oil, fry the chops to your liking
2) put the chop onto individual plate
3) in the same frying pan put the chickpeas with the peppers, garlic,coriander,cumin lemon zest and half lemon juice, turn up the heat and simmer for 1 minute
4) spoon the chickpeas on to the plates with the lamb
5) return the pan on the heat, tip in the spinach with the rest of the lemon juice and add a drop of oil, cook for 1 minute, and add to the plates.
