Madeleine Cakes

Ingredients

11/3 blanched almonds, toasted
1 tsp baking powder
3/4 cup icing sugar, plus some for dusting
grated rind of 1 lemon or orange
1 tbsp lemon or orange juice
6 tbsp unsalted butter, melted and slightly cooled

Method

Preheat the oven to 190°C gas 5

1) generously butter a 12 cup madeleine tin, sift together the flour and baking powder, using an electric mixer, beat the eggs and icing sugar for 6 minutes until creamy, gently fold in the lemon or orange rind and juice

2) starting with a quarter of the flour and baking powder mixture, fold in a quarter of the butter and keep alternating until all are thoroughly mixed. Allow the mixture to stand for 10 minutes, then spoon into the tin, tap the tin to release any air bubbles

3) bake for 15 minutes, rotating half way through cooking

Put on a wire rack to cool,and serve dusted with icing sugar
