Method
1. Remove the crusts from the bread slices and sprinkle liberally with water 2. Squeeze the bread to remove excess water 3. Place half the bread in a food processor and blend to a paste with olive oil 4. Place into a large bowl and add the finely chopped parsley and onion 5. Add the crushed garlic and chopped chilli to taste 6. Add olive oil and lemon juice to taste and season; the spread should be very flavourful

1 thick piece crusts removed, soaked in water sliced bread 1 medium, quartered onion 2 -3 crushed cloves garlic 1/3-1/2 tsp, fresh minced chili pepper 1 lb., flat leaf, stems trimmed parsley 1 (optional) egg yolks 3 tbs lemon juice 1/3 cup olive oil 1 -2 tsp, Greek vinegar or balsamic vinegar Salt olives for garnish
Method
1. Squeeze the soaked bread to remove excess water. 2. Discard any hard parts, and place half the bread in a food processor until everything is reduced to a paste. 3. Add the remaining parsley and bread to the lender along with the egg yolk, half the lemon juice, and half the olive oil. 4. Blend again, slowly adding more olive oil, 1 teaspoon vinegar, and some salt. 5. Taste and adjust the seasoning by adding more salt, pepper, and lemon juice or vinegar. The spread should be very flavorful.
