Marinated Herring

Ingredients

4 herrings filleted
1 tsp salt
1/4 pint salted milk
2 tbsp mustard
4 peppercorns crushed
4 juniper berries crushed
4 allspice berries crushed
1/4 tsp dill seeds
1 bouquet garni  Legend
1 onion, thinly sliced
1 carrot, thinly sliced
450 ml wine vinegar
50 ml oil

Method

1) soak the herrings for 3 hours in salted milk, drain and pat dry

2) spread the fillets with the mustard and roll up with the skin on the outside, fasten with a wooden cocktail stick and put them in a jar

3) in a pan add the vinegar, peppercorns, juniper, allspice and the dill, bouquet garni, and the onion, bring to the boil rapidly then simmer for 10 minutes, allow to cool, remove the bouquet garni, stir in the oil.

4) pour the marinade over the herrings.

Cover and store in the refrigerator 4 days before serving.
