Ingredients
3 slices whole bread crust removed and crumbled
125 ml milk
650 g steak, coarsley minced
1 egg, beaten
1 tbsp thyme, finely chopped
10 black peppercorns, coarsely ground
grate rind and juice of 3 oranges
salt and pepper to taste
flour for dusting
2 tbsp olive oil
2 garlic cloves, crushed
60 g sultanas
125 ml Campari
Method
1) combine breadcrumbs, milk, beef, egg, thyme, pepper, orange rind and salt to taste until the mixture is well blended and holds together
2) form small ball, then flatten them slightly, roll them in flour
3) fry the balls in hot olive oil for about 5 minutes on each side, add the garlic to the pan when turning the balls
4) stir in the orange juice, sultanas and Campari, simmer gently for 12 minutes, turning the balls in the sauce.
