Ingredients
3 tbsp corn oil
2 tbsp all-purpose flour
1 cup onion, chopped
2 tsp crushed garlic
2 cups roasted new Mexican green chilies, peeled, seeded and chopped
2 cups beef stock
1 tsp salt
Method
1) saute onions in corn oil until they begin to brow stir in the garlic and cook for 2 minutes, stir in the flour, add chopped chilies, stir in the stock, season to taste, bring to the boil, reduce the heat and simmer for 10 minutes, the consistency of the sauce should be thick.
