Moon Chai Recipe
Ingredients
8 pieces of ginger 4 cinnamon sticks, broken in small pieces 1 tsp green cardamom pods, crushed 2 tsp black peppercorns,crushed 1 tsp cloves, whole 1/2 tsp fennel seeds, crushed 1/2 tsp licorice root 1/2 tsp allspice 1 tsp black tea (optional) 6 cups water 4 tbs honey milk, to taste
Method
1) in a saucepan mix, everything except for milk and honey
2) cover pot and simmer on a low heat for 30 minutes
3) remove from heat, cover and let sit for another 35 minutes
4) strain out the spices , reheat the tea if desired
Serve with honey and milk
