Omelette With Herbs
Serve 1
Ingredients
2 eggs 1tbsp butter 1 tbsp cream 1 tsp chopped fresh mixed herbs ( such as tarragon, chives, parsley or marjoram ) salt and fresh ground black pepper
Method
1) mix together the eggs, salt and pepper
2) melt the butter in an omelette pan or small non-stick frying pan, until foamy and light nutty brown, then pour in the eggs
3) lift up the sides using a palette knife and tilt the pan to allow the uncooked egg to run underneath and cook
4) when the egg is set but still soft, spoon the cream down the centre and sprinkle with the herbs,. cook one more minute .
Other fillings could include sautéed sliced mushrooms, or potatoes, diced ham or crumble crisp bacon, tomato sauce and grated cheese.
