Ingredients
125 ml milk
125 ml water
2 egg yolks
125 g plain flour
2 tbsp caster sugar
2 tbsp melted butter
2 tbsp Grand Marnier
30g butter
2 tbsp icing sugar
Filling
200 ml double cream
2 tbsp Grand Marnier
grated ring and juice 1 orange
juice of 1/2 lime
1 tbsp orange marmalade
2 tbsp caster sugar
Method
1) process in blander, milk, water ,egg yolks,sugar melted butter, Grand Marnier, until creamy
2) to make the filling, whisk the cream until it start to thicken
3) mix orange marmalade with the Grand Marnier
4) fold all of the sauce ingredients in the cream then beat until the cream is thick, keep cool
5) melt a knob of butter in a heavy frying pan, pour 3 tbsp of batter into the pan then swirl until the batter cover all the base of the frying pan cook for 1 minute, until golden, then turn and cook the other side
6) make another 6 crepes in the same way
To serve
Spoon 2 tbsp of the cream in the centre of the crepe, then roll, sprinkle with icing sugar.
If you have the time, leave the batter to stand for 30 minutes, then beat again adding 1 tbsp beer
