Pine nut Egg and Herb Sauce

This sauce goes very well with asparagus and artichokes

Ingredients

2 hard-boiled eggs, peeled and roughly chopped
1/2 red onion, finely chopped
1 bunch each fresh dill, tarragon, parsley,mint chopped
2 tbsp pine nut, lightly toasted
1 clove garlic, crushed to a past with a pinch of salt
2 tbsp red wine vinegar
1 tsp balsamic vinegar
1 tbsp whole milk yogurt
2 tbsp olive oil
salt and pepper to taste

Method

Mix all the ingredients in a bowl.
