Pistachio Sauce
Delicious with grilled lamb, chicken or fish
Ingredients:
150g shelled unsalted pistachios 1 small garlic glove, crushed to a paste with a pinch of salt ¼ teaspoon finely grated fresh lemon zest 5 tbsp extra-virgin olive oil 2 tbsp fresh lemon juice and grated zest 1 tbsp water 1 to 3 teaspoons orange flower water ½ cup chopped fresh flat leaf parsley 1 tablespoon coarsely chopped fresh mint ¼ teaspoon sea salt salt and black pepper to taste
Method
1) in a food processor , roughly crush the nuts, then transfer to bowl,add garlic paste into pistachios along with remaining ingredients until combined well check for seasoning.
