This is really heavenly
Ingredients
1.5 kilo pork loin, with skin removed
1/2 tsp chopped fresh thyme
4 tbsp olive oil
1 tbsp butter
1/2 cinamon stick 3 bay leaves
1.5 kilo red onion finely sliced
1 lemon zest
1.5 litres milk or more to cover the meat
1 tsp sugar
salt and fresh black pepper to taste
Method
1) fry the onions over high heat, sprinkled with the sugar , until golden
2) rub the pork all over with salt, pepper and thyme
3) melt the butter with the oil in a heavy saucepan over a high heat, add the meat and seal for 2-3 minutes until browned on all sides
4) pour of the oil and butter, and add the cinamon, lemon zest, bay leaves and milk
5) bring to a simmer and cook half covered, for about 1 1/2 turning the meat occasionally, make sure it does not catch on the bottom
6) remove the cinamon, lemon zest, transfer the meat to a carving board and cover
7) season the onions milk mixture to taste. The consistency of the sauce should be thick and nuggety, if it need more time to reduce, cook a little longer, stirring often.
