Ingredients
4 boneless pork loin steaks
2 kiwi fruit, juice and pulp purée
45g butter
1 tbsp olive oil
For sauce
45 g shallots, finely chopped
45 g pickled, gherkins, finely chopped
250 ml double cream
2 tbsp Dijon mustard
1 tbsp red wine vinegar
1 tsp sugar
salt and pepper to taste
Method
1) prick the pork all over, and marinate with the kiwi purée, for few hours
2) pat dry the pork steaks and fry in hot butter and oil for 8 minutes on both sides, remove from pan and keep warm
3) add all the sauce ingredients to the pan, simmer, stirring all the time for 3 minutes, season to taste
Serve the meat covered with the sauce.
