Ingredients
1/25 lb peeled prawns, cut if large
4 dried mushrooms
8 cups bean sprouts, rinsed
2 cups bamboo shoots
8 water chestnuts
1/2 tbsp cornflour
pinch of salt
1 tbsp soya sauce
1 clove garlic, crushed
1 tsp sugar
1 tbsp dry sherry or rice wine
1/2 cup blanched almonds
Method
Soak the mushrooms in warm water for 30 minutes
1) drain, dry the mushroom and slice discarding the stalk
2) cut the bamboo shoots and water chestnuts into matchstick strips
3) in a saucepan mix, soya sauce, salt, sherry, cornflour, garlic, sugar, vegetables and 1/3 cup water, bring to the boil and simmer slowly, stirring for 3 minutes, stir in the prawns, cover and simmer gently until the prawns are hot.
Serve topped with the almonds.
