Richmond Maids of Honour

Ingredients

8 oz puff pastry
8oz ground almonds
4oz caster sugar
2 egg, beaten
1oz flour
4 tbsp double cream
pinch nutmeg
2 tsp lemon juice
a little sifted icing sugar

Method

Preheat oven 400F Gas 6

1) grease and flour 20 patty tins

2) roll out the pastry on a slightly floured surface and use to line the tins, trimming the edges neatly

3) in a bowl, mix together the ground almonds and sugar, then stir in the beaten eggs, flour, cream, nutmeg and lemon juice, divide the mixture between the pastry cases and bake for about 15 minutes, until golden

4) turn out on to a wire rack and allow to cool

Serve sprinkled with a little icing sugar
