Roast chicken with Morrocan Marinade

Ingredients

3 pound chicken
½ cup Moroccan marinade  Moroccan Spiced Lemon Marinade
2 onions, sliced
6 zucchini, sliced

Method

Preheat the oven to 180C/350F/gas 5.

1) grease a 13-inch roasting pan.

2) rub the chicken with 1/4 cup marinade

3) toss onions and zucchini with remaining 1/4 cup marinade and spread them in bottom of prepared pan.

4) place chicken, breast-side up, on top of vegetables and bake for 30 minutes. Turn chicken over and bake 30 minutes more.

5) turn chicken breast-side up and cook until golden brown Let sit 10 minutes before carving.
