5 cloves garlic, unpeeled, 5 fresh red chillies, a small piece of trassi, 1 tsp brown sugar, 1 tsp tamarind concentrate, 2 tbsp peanuts, 5 shallots unpeeled.
Method
Dry fry the unpeeled garlic and shallots until the skins are dark brown , dry fry the chillies and the trassi wrapped in foil, until the trassi darken, peel the garlic and shallots, chop the chillies, removing seeds and process everything to a paste.
