Ingredients
4 cups rose petals
2 1/4 cups sugar
juice of 1 Lemon
1 cup water
Method
1) cut the bottom of each petals
2) heat gently in a pan the petals and water
3) remove the petals and put aside
3) add sugar and lemon juice to the pan, bring to the boil, and simmer until you are left with a very thick syrup
4) stir in the rose petals to the syrup
5) pour into 4 oz jars sterilised jars and sprinkle a pinch of extra sugar on the surface of the hot jam,and seal with caps and rings.
