1 tsp, black peppercorns, 2 tsp sea salt, handful fresh sage leaves, 1 small sprig fresh rosemary, leaves picked , 1 small sprig fresh thyme, leaves picked, 1 clove garlic, zest of one lemon.
Method
Coarsely ground all ingredients together, rub into leg of lamb or pork chop before cooking.
