Ingredients
1 kg tomatoes, roughly chopped
1 small onion, peeled and finely chopped
1 large carrot, peeled and chopped
2 sticks celery, finely chopped
1 garlic clove, peeled and crushed
2 tbsp fresh chopped parsley
1 tsp caster sugar
salt and pepper to taste
2 tsp chopped basil (optional)
Method
1) put the tomatoes, onion, carrot, celery, garlic, parsley, sugar and salt and pepper into a saucepan and simmer gently for 30 minutes, until the tomatoes have softened and almost turn to purée
2) rub through a sieve and return to the pan, if necessary, boil rapidly, uncovered, until reduced to a sauce consistency, check the seasoning and stir in the basil, if using.
