Sambal Badjak Blend
This mixture is from Indonesia, it is as a table condiment, these are served in small dishes on the table.
Ingredients
10 fresh red chillies, 2 onions, chopped, 5 cloves garlic, a small piece of trassi, 5 candlenuts, 2 tsp tamarind concentrate, 1/2 tsp ground galangal, 3 tbsp oil, 1 tsp salt
Method
Process the chillies, onions, garlic, trassi and candlenuts to a smooth paste, heat the oil and fry the paste for a few minutes, then add the remaining ingredients and cook gently for 15 minutes.
