Sauce Recipes Barbecue Sauce
Ingredients
2tbsp vegetable oil 1 large onion,chopped 2 garlic cloves, crushed 14oz can tomatoes 2 tbsp Worcestershire sauce 1 tbsp wine vinegar 3 tbsp clear honey 1 tsp mustard powder 1/2 tsp mild chilli powder (optional) salt and ground black pepper
Preparation:
1) Heat the oil in a saucepan and fry the onion with the garlic until soft, stir in the canned tomatoes, Worcestershire sauce, white wine vinegar, honey and mustard powder, add the chilli powder, if you are using it, and mix well.
2) Simmer the sauce, uncovered, for about 15-20 minutes, stirring occasionally, until it is thick and flavoursome, cool slightly, then purée in a blander or food processor, (if a very smooth sauce is preferred, press the mixture through a sieve) add salt and ground black pepper to taste.
3) Pour the sauce into a bowl and serve hot or cold, with hot dogs or burgers, this sauce is also very good for basting: brush it over chops, steaks, chicken or kebabs before cooking them on the barbecue or in the oven.
