Sauce Recipes Green Peppercorn Sauce

Ingredients

1 tbsp green peppercorns in brine, drained
3 tbsp butter
1 small onion, finely chopped
1 1/4 cups chicken or vegetable stock
juice of 1/2 lemon
1 tbsp plain flour
1 tsp Dijon mustard
3 tbsp double cream
salt and ground black pepper

Preparation:

1) pat the peppercorns dry on kitchen paper, then use the flat blade of a sharp knife to crush them.

2) melt 2 tbsp of butter in a small saucepan, add the onion and cook over a low heat for 3-4 minutes, then add the stock and lemon juice, bring to the boil, lower the heat and simmer for 15 minutes.

3) Soften the remaining butter if necessary, and work in the flour to make a paste, pinch off tiny pieces of the paste and stir them into the sauce, making sure that each piece has been absorbed before adding the next, cook until the sauce thickens.

4) lower the heat and whisk in the peppercorns, mustard and cream, with salt and pepper to taste, serve hot , with pork steaks, pasta or rabbit.
