Sauce Recipes Pesto Recipe

Ingredients

2 cups tightly packed basil leaves
2 garlic cloves, crushed
2 tbsp pine nuts
1/2 cup olive oil1/2 cup finely grated parmesan cheese
salt and ground black pepper

Preparation:

1) Combine the basil leaves, garlic cloves and pine nuts in a mortar, using a pestle, grind them to a fine paste, scrape the mixture into a mixing bowl and whisk in the olive oil, one tea spoon at a time.

2) Alternatively, grind the basil, garlic and nuts in a food processor, with the motor running, gradually add the oil through the feeder tube in a thin stream until the sauce is thick and smooth, scrape into a mixing bowl.

3) Stir the cheese into the basil mixture, with salt and pepper to taste, heat gently and toss with pasta, or boiled new potatoes.

Tomato Pesto

For tomato pesto, drain 4 sun-dried tomatoes in oil, grind them with the basil, garlic and nuts, substitute 4 tbsp of the oil from the tomatoes for half the olive oil.
