Satay Sauce
Ingredients
1 1/4 cups roasted peanuts 3tbsp vegetable oil 1 small onion, roughly chopped 2 garlic cloves, chopped 1 fresh red chilli, seeded and chopped 2.5 cm lin piece of fresh root ginger, peeled and chopped 5 cm piece of lemon grass,roughly chopped 1/2 tsp ground cumin 3 tbsp chopped fresh coriander 1tbsp sesame oil 3/4 cup coconut milk 2 tbsp kecap manis ( thick soy sauce) 2tsp freshly squeezed lime juice salt and ground black pepper
Preparation:
1) Place the peanuts in a clean dish towel and rub off the husks, tip into a food processor and add 2 tbsp of vegetable oil, grind to a smooth paste, set aside into a bowl.
2) Add the onion, garlic, chilli, ginger, lemon grass, cumin and coriander to the clean food processor, process to a fairly smooth paste.
3) Heat the remaining vegetable oil with the sesame oil in a small saucepan, add the onion paste and cook over a low heat for 10-15 minutes, stirring occasionally, stir in the pinut paste, with the coconut milk, thick soy sauce and lime juice, heat through gently, stirring all the time.
4) Add salt and pepper to taste, spoon the sauce into individual bowls or saucers and serve warm with grilled skewered chicken or pork.
Satay sauce also makes an excellent dip for small spicy meatballs.
