Ingredients
1.3 kilo 3 lb baking potatoes, peeled and cut into 2.5 cm cubes
6 tbsp bacon dripping or goose fat or oil
3 rosemary sprigs (only leaves), chopped
salt and freshly ground black pepper
Method
1) toss the potatoes with a little of the fat melted, season with salt and pepper,
2) heat the fat over a medium high heat, in a frying pan
3) add the potatoes and cook 2-3 minutes without stirring, shake the pan time to time, until potatoes are evenly browned all over, season to taste
4) add a little more fat and continue cooking for 25 minutes, stirring frequently, few minutes before the end of cooking, sprinkle the potatoes with the rosemary.
