Ingredients
1 tbsp olive oil
2 tsp ground cumin
1 tsp minced ginger root
1 onion, very thinly sliced
1 pounds large shrimp, peeled
1 1/4 pound tomatoes, coarsely chopped
2 tbsp lemon juice
1 tsp grated lemon zest
1 tsp sugar
½ tsp salt
¼ tsp freshly ground black pepper
¼ cup chopped fresh coriander

steamed green beans
Method
1) fry in oil for 30 seconds the cumin and the ginger, add the onion, stir well, add the shrimps, cook for 2 minutes per side
2) transfer the shrimps to a plate, leaving the onion in the pan, add the tomatoes , lemon juice, lemon zest, sugar, salt and pepper to the pan, cook over medium heat for 8 minutes, until tomatoes and onions are tender and most of the liquid has evaporated, return the shrimp to the pan and stir, season to taste
Serve sprinkled with the coriander, garnished with couscous and beans.
